South African Cabernet Shiraz
We proudly bring you a classic blend of 60/40 Cabernet Sauvignon/Shiraz, both originating from the Western Cape Province of South Africa. The Cab's intensity and red fruit flavors coupled with the Shiraz's subtler cocoa and coffee hints create a masterfully balanced dry and full-bodied red that will stand the taste of tine. A smooth tannic structure allow it to be consumed fairly young with an obvious "greenness" characteristic of young reds, but like any fine red wine its emergence from a 12+ month bottle-aging period will provide for an unmatched wine & dine experience (oh yes, it pairs exceotionally well!).
Food pairing: BBQ baby back ribs, bison, and warm brie cheese on slightly broiled French baguette with pepper and a drop of honey.
Serving: Between 15 and 18 degrees Celcius
Comments: Allow it to sit and breathe at least 15 minutes before serving, or decant slowly and enjoy!
